Bone-In: Fully trimmed with the h-bone removed and shank trimmed.
Semi-Boneless: Fully trimmed with the h-bone removed and shank removed.

Whole Leg – 8-10 Average Portions

ROASTING
Preheat oven to 425 degrees. Once oven is preheated, reduce heat to 350 degrees. If you choose, add a marinade, rub or select a seasoning recipe. Place roast in a roasting pan on a rack. Roast for approximately 1 hour – 1 hour and 15 minutes or until the internal temperature reaches 125 degree – 130 degrees for rare to medium rare. Add a few more minutes for medium (140 Degrees) and slightly longer for well done (150-160 degrees), checking frequently. Let stand about 4-6 minutes before slicing.     Excellent Purchase
    My whole 6-pound American leg of lamb arrived within a few days in a VERY well insulated carton. The lamb was cold and surrounded by freeze packs to make sure that the lamb would stay cold. The recipe I was following mentioned a “fat cap” on the lamb that this leg of lamb didn’t have. Did it affect the delicious result after roasting? Not at all! Maybe having that fat layer would have come in handy when making gravy. The lamb itself was tender and flavorful. I will be ordering from this company, for sure!
