Seasoning Options
Herb Marinade: Extra Virgin Olive Oil, Fresh Chopped Garlic, Rosemary, Thyme & Sage.
Apricot Plum: Sweet Apricot Preserve and Plum Jam.
ROASTING
Preheat oven to 400 degrees. If you choose, add a marinade, rub or seasoning recipe. Put roast on a roasting rack fat side up in a roasting pan. Place uncovered in oven and reduce temperature to 350 degrees. Roast approximately 40-45 minutes. Let rest for about 4-6 minutes before slicing.
