ROASTING
Preheat oven to 425 degrees. Once oven is preheated turn oven down to 375 degrees. If you choose, add a marinade, rub or select a seasoning recipe. Place lamb on roasting pan bone side down. Roast approximately 20-25 minutes or until the internal temperature is 125 degrees – 130 degrees for medium-rare. Continue cooking a few more minutes for medium and slightly longer for well done, checking frequently. Let stand about 4-6 minutes before slicing.
