From the shoulder, the Flat Iron steak is nicely marbled making it an extremely tender and flavorful cut. The taste is a cross between a tender filet mignon and a flat flank steak. Great for broiling, grilling or stir-frying.
BROILING
Preheat broiler. Place broiling pan 3-4 inches away from heat source. Broil approximately 8-10 minutes (depending on your degree of doneness you desire), total cooking time. Consult Cooking ABC’s for more information on cooking times.
