BRAISING
Heat oil in skillet. Brown chicken on all sides until golden brown. Drain some fat. Add vegetables and cook until tender. Return chicken to pan along with vegetables and seasonings. Add 1 inch of water, broth or your favorite liquid. Bring to a boil. Reduce heat, cover and simmer for approximately 25-30 minutes.

STEWING
Heat oil in large pot. Brown your chicken on all sides until golden brown. Drain some fat. Remove chicken from pot. Add vegetables and cook until tender. Return chicken, seasoning, water, broth or your favorite liquid to just barely cover chicken. Cover and simmer until tender, about 25-30 minutes.

BROILING
Preheat broiler. With oven on broil, place broiler pan 6-10 inches away from heat source. If you choose, add a marinade, rub or select a seasoning recipe. Broil for approximately 20-25 minutes total cooking time, turning often.

DEEP FRYING
Heat 3 inches of oil in a heavy pan to 375 degrees. Dip chicken in batter or breading and immerse in oil. Fry until internal temperature of chicken reaches 160 degrees and is golden brown. Drain on a rack or on paper towels.
GRILLING
Preheat grill. If you choose, add a marinade, rub or select a seasoning recipe. Place on grill skin side up and cook on low heat for approximately 25-30 minutes total cooking time or until the internal temperature reaches 160 degrees. Baste and turn often to prevent charring.
ROASTING
Preheat oven to 400 degrees. Rub chicken with a rub or marinades or your favorite blend of spices. Place chicken on a baking sheet. Reduce oven heat to 350 degrees and roast for approximately 30-40 minutes total or until the internal temperature reaches 160 degrees.
SAUTEING
Heat butter or oil in pan. Season chicken with a rub, marinades or your favorite blend of spices. Saute over high heat until chicken is brown on first side. Flip chicken and brown on second side. Turn heat down to continue cooking for approximately 20-25 minutes or until internal temperature reaches 160 degrees. Turn chicken often until fully cooked.
