Amazing Roasted Turkey Breast with Gravy

INGREDIENTS
- 1 5-Pound Boneless, Skin-On Turkey Breast
- 1 Lemon, Sliced
- 1 Orange, Sliced
- 3 Pints Turkey Stock
- 6 Tablespoons Unsalted Banner Butter, at Room Temperature
- 3 Cloves Garlic, Minced
- 1 ½ Teaspoons Chopped Fresh Thyme Leaves
- 1 ½ Teaspoons Chopped Fresh Rosemary
- 2 Teaspoons Kosher Salt
- 1 Teaspoon Freshly Ground Black Pepper
INSTRUCTIONS
- Let turkey breast stand at room temperature for 30 minutes.
- Preheat oven to 350 degrees. Lightly oil a 9×13 baking dish or coat with nonstick spray. Spread lemon and orange slices into prepared baking dish. Add turkey stock.
- In small bowl, combine butter, garlic, thyme, sage and rosemary.
- Dry turkey breast thoroughly with paper towels, Using your fingers carefully loosen skin from the meat, spreading half of the mixture under the skin. Tie breast to secure skin a create a beautiful shape for cooking.
- Place turkey, skin side up, on the lemon and orange slices. Spread the rest of the butter mixture over the top of the breast. Season with salt and pepper, to taste.
- Place baking dish in oven and turn down to 325 degrees. Roast until the turkey is completely cooked through, reaching an internal temperature of 160 degrees or about 1 hour and 30 minutes.
- Slice the turkey breast the long way and enjoy.
