Our Dry Aged All Natural Filet Mignon Roast is "the roast of all roasts." Cut from the tenderloin of beef its outstanding buttery texture "melts in your mouth." Roast is hand tied with a thin layer of beef fat to maintain moisture for optimal cooking. Center cut of the Filet Roast is also known as Chateaubriand.

32 - 48 oz - Feeds 3-4 Average Adults

ROASTING
Preheat oven to 450 degrees. If you choose, select a seasoning recipe. Place roast on roasting rack, fat side up in a roasting pan. Put uncovered pan in oven and reduce temperature to 350 degrees. Roast for approximately 20 minutes per pound. Consult the Cooking ABC's for more information on cooking times. Let roast rest for about 4-6 minutes. Remove fat covering and string before slicing.
