DEEP-FRYING
Fry only chicken parts for best results. Heat 3 inches of oil in a heavy pan to 375 degrees. Dip chicken in batter or breading then immerse in oil. Fry until the internal cooking temperature of chicken reaches 160 degrees and is golden brown. Drain on a rack or on paper towels. Consult Cooking ABC's for more information on cooking times.

ROASTING
Preheat oven. Roast at 350 degrees for approximately 1 hour and 30 minutes. Check to see that the internal temperature in the thigh joint reaches 160 degrees. Let rest for about 4-6 minutes before carving. Consult Cooking ABC's for more information on cooking times.
