ROASTING
Preheat oven to 400 degrees. If you choose,
add a PrimeTimeButcher.com marinade, rub or select a seasoning recipe. Put roast on a roasting rack fat side up in a roasting pan.
Place uncovered in oven and reduce temperature to 350 degrees. Roast approximately 40-45 minutes. Let rest for about 4-6 minutes before slicing.
